Lecithin contains compounds that form the structure of cell membranes. Lecithin deficiency can cause cell walls to harden, which limits the flow of nutrients in and waste productcs out of the cell. This effectively prematurely ages the cells. Lecithin’s components are also involved in many other key cell processes.
Lecithin is a phospholipids and is present in all living cells. Until the advent of soybean processing, the egg remained the most common source of Lecithin. Because of its high Lecithin content, egg yolk is still used today to produce food emulsions such as mayonnaise.
